Chinese spaghetti with shrimp

Ingredients :
1/2 cup Lemon Juice
3 tbsp Chili Sauce ,(sweet)
2 Red Peppers ,medium size
1 pack Spaghetti ,(500g)
1 kg Shrimp ,medium size
1/3 cup Peanut Oil
Salt
1 1/2 cup Coriander ,fresh and chopped


Directions :


1. Boil pasta and drain. While pasta is boiling, wash shrimp well then peel and remove the dark vein on the back. Slice peppers thinly, then cut each slice in half.
2. In a wok, heat half quantity of oil over medium heat. Add pepper and shrimp and stir until shrimp turn pink.
3. Add remaining oil and coriander, stirring constantly for a few seconds. Add spaghetti, salt, lemon juice and chili sauce. Stir all ingredients well together and leave over heat for ½ a minute. Remove from heat and serve immediately.Note: You can add ½ cup chopped un-toasted peanuts to the dish with the pepper and shrimp

Fish kofta with mustard mayonnaise sauce

Ingredients :

500 gram Fish
1 tbsp Lemon Juice
3 tbsp Corn Oil Crystal
1 tbsp Dijon Mustard
1 cup Green Onion ,chopped
2 Garlic Cloves ,crushed
1 Egg ,lightly beaten
1 1/2 cup Breadcrumbs
2/3 cup Mayonnaise
1 Onion ,meduim size, finely chopped
2 tsp Lemon Peel ,grated


Directions:


1. In small bowl mix mayonnaise, mustard, lemon peel, lemon juice and green onion. Refrigerate until needed.
2. In saucepan heat and stir 1 tbsp oil, onion and garlic until soft. Remove from heat and set aside.
3. In food processor process fish over medium speed until smooth. Pour into medium plastic bowl then add onion and garlic and mix well. Knead mixture with your hands until consistant. Divide mixture into balls and shape into small pies.
4. Dip fish pies in beaten eggs then in breadcrumbs to coat well.
5. In a saucepan heat remaining oil and pan-fry kofta until golden. Drain on kitchen papper.
6. Put on a platter and pour sauce over it or serve separate on the side.

Fish a la Bretonne

Ingredients :

1/2 kg Fish Fillet ,white fish
2 Potatoes , peeled and sliced
1/2 can Red Beans ,about 100g
6 Mushrooms ,fresh, sliced
1 Onion ,medium size, chopped
1/2 cup Chicken Broth
1 cup Fish Broth
1 tbsp Coriander ,fresh, snipped
1/2 cup Sunflower Oil Crystal
1 tsp Balsamic Vinegar
Salt and Pepper

Directions :
1. Wash fish then put in a non-stick metal baking dish, season with salt and pepper.
2. Add ¼ cup oil and pan-fry fish for 5 minutes until golden from both sides. Remove from heat.
3. Heat oven to medium heat (180-190 C). Put baking dish in oven and leave for 15 minutes until tender.
4. Meanwhile, in a saucepan heat ¼ cup oil over high heat then fry potato slices for 10 minutes until golden.
5. Add onion and stir constantly until golden then add mushrooms and stir for 1 minute.
6. Add red beans, fish broth, chicken broth and vinegar and simmer for 5 minutes.
7. To serve, arranges potatoes on the bottom of a serving platter. Add fish to form another layer then red beans and sauce. Sprinkle some fresh coriander for garnish.

Pasta with Chicken Recipe : ;)


RECIPE INGREDIENTS:


1 tablespoon butter
3 tablespoons oil
2 onions, and cut into thin slices
1 teaspoon salt
1/2 Kilos boneless, skinless chicken breasts
1/4 teaspoon black pepper
3/4 teaspoon rosemary, or 2 teaspoons chopped fresh rosemary
1 clove garlic, chopped
1/2 pound Pasta (not spaghetti)
50 grames blue cheese, crumbled (about 1/2 cup)


Method :

First, boil the macaroni for 8 minutes, then drain it, wash it with cold water. Put
Melt the butter in a pan, then add the onion slices till it turns brown, then you can add the oil, the chicken,pepper, salt, garlic, and the rosemary for 15 minutes. Add the cheese and the macaroni to it for just 5 minutes.
